WebSep 1, 2024 · Here we investigated and characterized the formation of thermal-induced rice glutelin fibrils at 85 °C and pH 2.0. The potential effects of rice glutelin fibrils on the in vitro starch digestibility were also evaluated. Thioflavin T fluorescence spectral analysis revealed extensive formation of rice glutelin fibrils after 4 h of incubation at pH 2.0 and 85 °C. WebREP-1 was further purified to a single polypeptide of 36 kDa. REP-1 digested in vitro both the acidic and basic subunits of rice glutelin, the major seed storage protein of rice. Determination of the N-terminal amino acid sequence and experiments with protease inhibitors indicated that REP-1 is a cysteine endopeptidase.
